Puffed rice is a popular low cost breakfast cereal and snack used worldwide because of its ready to eat (RTE), lighter and crispness characteristics. India produces annually 89 million tonnes of rice (second largest producer of rice in the world), but, only 10 percent of it is converted to different value added products such as puffed rice, popped rice or flaked rice. Puffed rice has got a highest demand both in national and international market. Quality factors such as uniform puffing, contamination free, good colour, crispness etc are the major concern for export of puffed rice. However, the production of puffed rice in India is only limited to village levels.
The puffing method traditionally followed in India is sand-roasting. The whole process of puffing is very tedious, time consuming and involves a large amount ofskilled labour working in hot conditions
Hence, puffed rice is traditionally made by subjecting paddy to high temperature short time treatment usually done by sand treatment. Batch process is labour and energy intensive and time consuming. Therefore, there is a need to mechanize the puffing process of rice for commercial production. Considering the demand and value addition of rice Indian Institute of Food Processing Technology (IIFPT) has Designed & developed continuous rice puffing equipment & which is manufactured & marketed by M/s. VD ENGINEERS CHENNAI. where 100 percent of the conditioned rice is converted into puffed rice as snack foods.
Operation of Rice puffing Equipment
Initially the conditioned rice grains are taken in the feed hopper and it is delivered uniformly from the hopper to the processing chamber using vibratory feeder arrangements. In the processing chamber hot air is introduced with the temperature of 300-350oC. Due to contact of conditioned grains with elevated temperature,suddently the moisture is removed from the rice grains and puffing/expansion is carried out. After puffing the density of the grain is reduced low level. Hence the reduction of density causes to float the puffed rice in the air stream of processing chamber and is delivered from the processing chamber to the collecting tank by gravity action. The temperature of the grain is reduced to atmospheric temperature by gentle air cooling of the product. The final cooled products are packed and stored in dry conditions.
